Queso has always been one of those foods that makes people immediately say, "Yeah, I'll have some of that." It's a staple of Tex-Mex and Mexican-American restaurant culture, usually showing up warm, melty, and ready to be scooped up with tortilla chips. It's the kind of appy you order for the table and start devouring before you suddenly realize you definitely didn't leave enough room for your actual entrée. No judgment, we've all been there.
