The Idaho Candy Company has been making the Idaho Spud Bar in Boise since 1918, with over a century of production and very little deviation from the original formula. It’s potato-like shape (get the name now?), is either charming or confusing depending on your perspective…either way, it doesn’t take away from the fact that it tastes fantastic. 

It’s a soft, chewy combination of light chocolate-coated marshmallow and shredded coconut, giving it a texture that’s completely different from the typical hard snap of most chocolate bars. It’s more pillowy than crunchy, more nostalgic than refined, and honestly hard to compare to anything else in the category.

This is one of those deeply regional American treats that people from the Pacific Northwest are fiercely loyal to, while the rest of the world usually has no idea it exists. A true cult classic in snack form, and a must-try for any certified chocoholics.
